Monkey's Chilli Bombs

Left over Chilli, this is a great way to use it up.

Ingredients

For the dish

  • 750 g Minced Beef 

  • Left Over Chilli

  • 250 g Grated Cheddar Cheese

  • 20 Rasher Streaky Bacon (approx)

  • 100 ml Franks Hot Sauce

  • Favourite BBQ Rub

  • Salt

  • Pepper.

I used some Round Ice Cube moulds bought from on line auction site.

Filled the moulds with the Chilli and froze it.

Once it has frozen and you are ready to make these Monkey Chilli Bombs.

Set BBQ/Pellet Smoker up for indirect cooking  @ 150'C (302'F)

Take a portion of the seasoned Minced Beef and flatten in to a Patty shape.

Dip the frozen Chilli Ball in to the Franks Hot Sauce, making sure they are covered, then place on to the Patty.

Cover Chilli Ball in Cheese, then bring the Minced Beef up and around to enclose the Chilli Ball and Cheese inside.

Wrap a piece of Streaky Bacon around the centre of the Ball, then turn through 90 degrees and wrap another piece of Streaky Bacon round. The Ball should be covered in Bacon. 

Place on the grill and cook, Small Balls 1 hour and Large Balls 1 hour 15 minutes. 

Serve as they are or dip in Franks Hot Sauce or a Chilli Dip!
